Happy Holidays from Hawaii!

                                                                 Mele Kalikimaka!

Still on break - enjoying (a partially working) vacation on the Big Island with family :)

Spending time on the beach, snorkeling, exploring Volcano - home to Pele - and watching the stars at Mauna Kea. Looking forward to a gift of massage tomorrow...

Sending best wishes out to everyone during this holiday season. May ALL beings be happy! <3

We have been eating out more than I expected and I don't have a juicer here :(...but will resume "healthier" eating when I get home. Family and holidays might have something to do with the over-indulgence too :). I did manage to make Vietnamese Crepes one night (delicious!) for everyone and a quick stir fry another night.

We opted for a Mexican themed Christmas meal - I made a really yummy Chile Relleno Casserole. I followed this recipe - http://dishingwithleslie.blogspot.com/2012/08/chili-relleno-casserole.html (I subbed 2 Tbsp Rice flour & 1 Tbsp Corn Starch for the 3 Tbsp Flour to make Gluten Free) - I received compliments from everyone! Thanks Leslie for the inspiration!

Yellow Coconut Curry is next on the menu :)

A couple of places worth mentioning to have pupu's or eat dinner on the island are:

Lava Lava - Waikoloa/Kohala Coast, go during happy hour, sit on chairs/couches in the sand and enjoy pupu's until you watch the sun go down!   http://lavalavabeachclub.com/stay-play/in-the-neighborhood/

LavaLava

Bangkok House (Thai) - on Kuakini Hwy/King Kamehameha Mall in Kailua-Kona. Great Pad Thai!! Tucked away on the 2nd story of building facing the side and rear parking lot with view of hotels closer to Ali'i Drive.
